Unleavened circles of corn bread, known as tortillas, form the basis of Mexican street food. These can be stuffed with Mexican ingredients of meat, vegetables, salads and cheese, flavoured with Mexican herbs and spices. Depending on how they are folded, filled or cooked they can be served as enchiladas, tacos, quesadillas, burritos, tostadas, chimichangas or a plethora of other delicious dishes!

Mexican spices impart the unique flavours that we associate with authentic Mexican food. One of the most popular Mexican spice blends is Fajita seasoning. This is used to marinate meat and chicken, which is then cooked with other Mexican ingredients such as peppers and onions. Served sizzling with guacamole, soured cream, salsa and cheese, this makes a wonderfully sociable meal as everyone stuffs and wraps their own fajitas.

We have blended other Mexican herbs and spices to create Achiote paste spices, traditionally mixed with orange juice and garlic to create a paste that is fantastic with poultry and fish. These dishes are often complemented by other vibrant Mexican ingredients, including corn, refried beans and roasted vegetables, spiced with chillies.

Adobo spice rub is a blend of Mexican spices that can either be used as a rub on meat or fish prior to barbecuing, or alternatively as a marinade, once mixed with garlic and lime juice. Essential Mexican herbs to keep in your kitchen are the native Epazote leaves and Mexican Oregano. Used to season chilli con carne, moles, black beans, soups and tamales, amongst others, these traditional Mexican ingredients will add authenticity to your cooking.
