So, why is this the case? Basically, it is essential oils which give spices their distinctive zest & potency – exposure to light, air & heat all promote the breakdown of these oils and so loss of flavour. Resistance to Light : our foil pouches, unlike glass jars, are totally resistant to the highly detrimental effects of light. Indeed, you may well notice the advice on spices in glass jars to ‘store in a dark place’ – this is all very well until you realise they have probably been standing on a store shelf under glaring lights for days, weeks or even months on end (plus, there is no need to ‘lose’ our seasonings in the back of dark cupboards – keep them on display and easily to hand).
Resistance to Air : being made from three separate layers bonded together, our foil pouches ensure the seasonings are sealed totally air-tight. The resealable ‘zip-lock’ mechanism then ensures they are fully resealed after each and every usage. In addition to being highly convenient, the ‘zip-lock’ means that air is naturally ‘squeezed’ out every time they are resealed creating a vacuum-like effect – unlike a half-empty glass jar where, even when closed, the essential oils will be evaporating away into the airspace in the jar ready to be lost the instant the jar is next opened. 
Resistance to Heat : foil is a superb insulator – by reflecting light & heat away from the seasonings inside, the pouch helps to provide resistance against the detrimental effects of heat so again retaining all those great flavours & aromas.
